What better way to celebrate Christmas than with a yummy Christmas entertaining recipe. During this time of year we are all cooking up something or heading to the grocery store to bring a side dish to a party, like what I did this week. A lot of the time I find myself not making something because I honestly do not like the preparation and clean up and I find that it takes forever. During a normal weeknight I will find myself making a sandwich or cereal just so I don’t have to cook something over the stove or oven, I know pretty lazy right. This time of year though is fun because there are so many parties and I do want to make something that I can bring saying that I made it and that came straight from my kitchen. This recipe is one that I enjoyed making because it was simple, 4 ingredients, and yummy.

Peppermint Bark Chex Party Mix

12 Servings

Active Time: 20 minutes

Cook Time:  3 minutes

Ingredients

6 cups Rice Chex

1 cup white chocolate chips

1 cup chocolate chips

2/3 cup crushed candy canes

Directions

1. Melt the chocolate chips in a microwave safe bowl until melted, approximately 1 1/2 minutes. Stir after a minute. Drizzle chocolate over 3 cups of Rice Chex. Stir to coat.

2. Sprinkle 1/3 cup of crushed candy canes over the chocolate covered Rice Chex. Stir minimally, just enough to stick the candy to the Rice Chex. Place in the freezer for a couple minutes to quickly firm up the chocolate.

3. Melt the white chocolate chips in a microwave safe bowl until melted, approximately 1 1/2 minutes. Stir after a minute. Drizzle white chocolate over the remaining 3 cups of Rice Chex. Stir to coat.

4. Sprinkle the remaining 1/3 cup of crushed candy canes over the white chocolate covered Rice Chex. Stir minimally, just enough to stick the candy to the Rice Chex. Place in the freezer for a couple minutes to quickly firm up the white chocolate.

5. As soon as the chocolate is firm to the touch, combine the chocolate covered Rice Chex with the white chocolate covered Rice Chex. Stir to combine.

6. Serve Peppermint Bark Chex Party Mix.

If you are going to any Christmas parties this weekend or just need a quick snack, I would highly recommend this easy peppermint bark chex party mix. I know that I will be making something like this for my family for Christmas next weekend, and it is also good for eating for several days after you make it too. I have been snacking on it while watching my favorite Christmas movies as well. A little festive and yummy treat that takes no time at all. Hope everyone has a great weekend. I will be spending it trying to be festive while going to look at Zoo Lights, drinking hot chocolate, and trying to enjoy this cooler weather!
